Silly


Silly in reference to this pork belly I procured yesterday from Michael Clampffer of Mosefund Farms. This is an 18lb. whole belly of a Mangalitsa pig. Looks more like the belly of a brontosaurus. Like a Fred Flinstone pork belly, almost comical, cartoonish even. I plan on breaking this into 4 sections of roughly 4.5lbs each. One pancetta, one bacon, one speck and I'm undecided on what to do with the 4th piece. Perhaps I'll do 2 different pancette....tese, of course. I don't think arrotolata is even a possibility due to the size of this thing. Anyway, sorry for the short post. I thought this was noteworthy based on the ridiculousness of it. More on this in a week or so.

  1. I rolled the pancetta that I made from a Mosefund belly. It was tricky but doable.

  2. Make some Hungarian Bacon. Garlic and smoked or spicy paprika.

  3. Why don't you save a hunk and make yourself a nice stew, like with trippa, and some beans, like that.

    Better still, send me a hunk and I'll make it for you!!!

  4. I just got a 13lb belly from tails and trotters ( www.tailsandtrotters.com), as well as an 8lb half belly.

    I'm making bacon, and also for the second time ever, slicing some thin and grilling it.. just had it for the first time ever about 2 weeks ago and I love it done up korean style.

  5. we've been geting them for a while now from Pasture Prime and they are ridiculously gigantic, almost to the point that they wont fit in our Cook Shack smoker. We just got 2 more, came in at 52 lbs, granted they were skin on bone in.
